  • 4 medium Russet potatoes (about 2 lbs)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup crispy bacon bits
  • ¼ cup chopped green onions
  • 4 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and dry the Russet potatoes. Pierce each potato several times with a fork.
  2. Bake directly on the oven rack for 45–60 minutes until tender. Cool slightly, then slice open and scoop out insides into a mixing bowl.
  3. Mix potato flesh with cream cheese, sour cream, butter, garlic powder, salt, pepper, half of the cheddar cheese, and most of the bacon bits until smooth yet slightly chunky.
  4. Transfer mixture to a greased baking dish (8×8 inches), top with remaining cheese and bacon bits. Bake at 350°F (175°C) for 25–30 minutes until golden brown.
  5. Garnish with green onions before serving.
