- 4 medium Russet potatoes (about 2 lbs)
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1 cup crispy bacon bits
- ¼ cup chopped green onions
- 4 tbsp unsalted butter, melted
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wash and dry the Russet potatoes. Pierce each potato several times with a fork.
- Bake directly on the oven rack for 45–60 minutes until tender. Cool slightly, then slice open and scoop out insides into a mixing bowl.
- Mix potato flesh with cream cheese, sour cream, butter, garlic powder, salt, pepper, half of the cheddar cheese, and most of the bacon bits until smooth yet slightly chunky.
- Transfer mixture to a greased baking dish (8×8 inches), top with remaining cheese and bacon bits. Bake at 350°F (175°C) for 25–30 minutes until golden brown.
- Garnish with green onions before serving.
