Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fresh shiitake mushrooms, sliced
  • 1 cup wild rice
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery for about 5 minutes until softened.
  2. Add minced garlic and sliced shiitake mushrooms; cook until mushrooms are golden and moisture is released.
  3. Push the veggies aside; add chicken breasts and brown on both sides for about 4-5 minutes each.
  4. Pour in chicken broth and add dried thyme. Scrape any browned bits from the pot for added flavor.
  5. Stir in wild rice, seasoning with salt and pepper. Bring to a gentle boil then reduce heat to low. Cover and simmer for 45-50 minutes until rice is tender.
  6. Shred the chicken in the pot with two forks before serving. Adjust seasoning as needed.
