  • 1 cup full-fat sour cream
  • 3 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 cup pecans, coarsely chopped
  • 1 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan. Line the bottom with parchment paper.
  2. In a bowl, mix graham cracker crumbs with melted butter and sugar until combined. Press firmly into the bottom of the prepared pan.
  3. In a large mixing bowl, blend cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
  4. Fold in sour cream and vanilla extract gently until just combined. Stir in half of the pecans.
  5. Pour the filling over the crust and bake for 55-60 minutes or until set but slightly jiggly in the center.
