- 3β4 boneless skinless chicken breasts
- 1 packet ranch dressing mix
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 2 green onions, chopped
- Bacon bits (optional)
Instructions
- Preheat oven to 400Β°F (200Β°C). Poke holes in washed baking potatoes.
- Bake potatoes on the oven rack for 45-60 minutes until tender.
- Boil chicken breasts in water until cooked through, about 15-20 minutes. Shred the chicken.
- In a bowl, mix shredded chicken with cream cheese, ranch dressing mix, and half of the cheddar cheese.
- Slice tops off baked potatoes and scoop out some flesh. Mix with the chicken filling and stuff back into each potato.
- Top with remaining cheddar cheese, green onions, and optional bacon bits. Bake for an additional 15 minutes.
