- 3 tbsp unsalted butter
- 1 cup Gruyère cheese (shredded)
- 1 cup heavy cream

Instructions
- Caramelize Onions: In a skillet, melt butter over medium heat. Add sliced onions and cook for about 20 minutes until golden brown, stirring occasionally.
- Prepare Potatoes: Slice Yukon Gold potatoes into thin rounds for even cooking.
- Combine Ingredients: In a bowl, mix heavy cream with half of the shredded Gruyère cheese, caramelized onions, salt, pepper, and thyme.
- Layer the Dish: Grease a baking dish and layer half of the potato slices at the bottom. Spread half of the onion mixture over them. Repeat with remaining potatoes and sauce.
- Bake: Preheat oven to 375°F (190°C). Cover with foil and bake for 30 minutes. Uncover, top with remaining cheese, and bake for an additional 20 minutes until bubbly and golden brown.
- Let It Rest: Allow to rest for about 10 minutes before serving to set flavors.
