- 1 cup long grain rice (preferably basmati)
- 2 tablespoons vegetable oil or butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- ½ teaspoon ground allspice
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- ¼ cup toasted pine nuts (optional)
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a large pot, heat oil or butter over medium heat. Sauté onions until translucent.
- Add minced garlic, cinnamon, and allspice; cook until aromatic.
- Stir in rinsed rice to coat with spices, then add broth. Bring to a gentle boil.
- Cover and reduce heat; simmer for 15-20 minutes until liquid is absorbed.
- Optionally, toast pine nuts separately and mix them into the rice before serving.
