Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, combine the juice of two lemons, minced garlic, chopped thyme, rosemary, salt, and pepper to create the marinade.
- Pat the chicken dry with paper towels. Rub the marinade thoroughly over the chicken, including under the skin.
- Stuff the cavity with leftover lemon halves and herb sprigs for added flavor.
- Place the chicken in a roasting pan or cast iron skillet and roast for approximately 1 hour and 15 minutes until golden brown and juices run clear.
- Let it rest for 15 minutes before carving.
