- 1 cup green or brown lentils
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- Β½ red onion, thinly sliced
- Β½ cup fresh herbs (parsley or cilantro), chopped
- 3 tablespoons lemon juice
- 4 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water until clear. In a saucepan, combine lentils with 3 cups of water and bring to a boil. Reduce heat and simmer for 20-25 minutes until tender.
- While lentils cook, chop cherry tomatoes and cucumber into bite-sized pieces. Thinly slice red onion.
- Finely chop fresh herbs and add them to a large bowl along with the chopped veggies.
- Once cooked, drain excess water from lentils and let cool slightly before adding to the bowl.
- Drizzle with olive oil and lemon juice, then season with salt and pepper. Gently toss to combine.
- Serve immediately or refrigerate for later enjoyment.
