Ingredients

  • 1 cup green or brown lentils
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • Β½ red onion, thinly sliced
  • Β½ cup fresh herbs (parsley or cilantro), chopped
  • 3 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. In a saucepan, combine lentils with 3 cups of water and bring to a boil. Reduce heat and simmer for 20-25 minutes until tender.
  2. While lentils cook, chop cherry tomatoes and cucumber into bite-sized pieces. Thinly slice red onion.
  3. Finely chop fresh herbs and add them to a large bowl along with the chopped veggies.
  4. Once cooked, drain excess water from lentils and let cool slightly before adding to the bowl.
  5. Drizzle with olive oil and lemon juice, then season with salt and pepper. Gently toss to combine.
  6. Serve immediately or refrigerate for later enjoyment.
