Description
Mushroom Rice is a creamy, savory dish that brings warmth and flavor to any meal. Easy to prepare, it’s perfect for weeknight dinners or special occasions.
Ingredients
Scale
- 1 cup Arborio rice
- 2 cups fresh mushrooms (cremini or shiitake)
- 2 cloves garlic (minced)
- 1 onion (chopped)
- 4 cups low-sodium vegetable broth
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh herbs (such as parsley)
Instructions
- Prepare ingredients: Wash and chop mushrooms, dice the onion, and mince garlic.
- Sauté onions and garlic: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, about 3-4 minutes. Stir in minced garlic until fragrant.
- Add mushrooms: Toss in chopped mushrooms, cooking until softened and golden brown, about 5-7 minutes.
- Incorporate rice: Stir in Arborio rice, coating each grain with the mixture. Cook for 1-2 minutes until edges are slightly translucent.
- Gradually add broth: Slowly pour in vegetable broth one ladle at a time while stirring continuously, letting the liquid absorb before adding more—this creates a creamy consistency.
- Finish with cheese: Once rice is al dente (18-20 minutes), stir in Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
