Instructions
- In a large bowl, combine shredded chicken, black beans, corn, green onions, cumin, and chili powder until mixed well.
- Lay an egg roll wrapper flat and spoon 2 tablespoons of the filling onto one corner.
- Fold over the corner snugly, then fold in the sides tightly before rolling up completely. Seal edges with water.
- Heat oil in a deep skillet to 350°F (175°C). Fry egg rolls until golden brown on all sides (about 3-4 minutes per side).
- Remove from oil and drain on paper towels.
