Description

Southwest Egg Rolls are a crowd-pleasing appetizer bursting with flavor. Crispy on the outside and filled with zesty chicken, beans, and spices, they’re perfect for any gathering!


Ingredients

  • Egg Roll Wrappers
  • Cooked Shredded Chicken
  • Black Beans
  • Sweet Corn
  • Cumin & Chili Powder
  • Green Onions
  • Oil for Frying
  • Dipping Sauce (optional)

Instructions

  1. In a large bowl, combine shredded chicken, black beans, corn, green onions, cumin, and chili powder until mixed well.
  2. Lay an egg roll wrapper flat and spoon 2 tablespoons of the filling onto one corner.
  3. Fold over the corner snugly, then fold in the sides tightly before rolling up completely. Seal edges with water.
  4. Heat oil in a deep skillet to 350°F (175°C). Fry egg rolls until golden brown on all sides (about 3-4 minutes per side).
  5. Remove from oil and drain on paper towels.
