Instructions
- Preheat the oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels. Season generously with salt and pepper.
- Zest two lemons into a bowl and juice them, adding minced garlic and chopped herbs to create a marinade.
- Rub the marinade all over the chicken, including under the skin. Drizzle with olive oil.
- If using vegetables, chop them and arrange around the chicken in a roasting pan.
- Roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C), basting every 30 minutes.
