Instructions
- Preheat your oven to 400°F (200°C). Wrap beets in foil and roast for about 1 hour until tender. Allow to cool before peeling.
- Rinse and drain the chickpeas thoroughly.
- In a food processor, combine the roasted beets, chickpeas, tahini, lemon juice, minced garlic, olive oil, salt, and pepper.
- Blend until smooth. If the mixture is too thick, add water gradually until desired consistency is reached.
