Description

Celebrate spring with this delightful cake featuring fluffy layers, rich cream cheese frosting, and vibrant decorations—perfect for sharing with loved ones during festive gatherings.

Ingredients

Scale
  • 2 cups cake flour
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • 3 large eggs
  • 1 cup whole milk
  • 2 tsp vanilla extract
  • 4 cups powdered sugar (for frosting)
  • 8 oz cream cheese (room temperature)
  • Candy decorations (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Gradually mix in cake flour and baking powder alternately with milk until smooth.
  4. Divide batter between prepared pans and bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean.
  5. While cakes cool, whip together cream cheese and butter until fluffy. Gradually add powdered sugar; mix until combined. Optionally stir in vanilla extract for extra flavor.
  6. Once cakes are cooled, stack them on a serving plate with frosting in between layers. Frost the top and sides of the cake generously.
  7. Decorate with candy toppings or colorful sprinkles before serving.
