Instructions

  1. Preheat oven to 350°F (175°C) and line a 10×15 inch baking pan with parchment paper.
  2. Beat eggs and sugar together until pale and fluffy, about 5-7 minutes.
  3. Gently fold in sifted flour and cocoa powder, avoiding overmixing.
  4. Spread batter evenly in the pan and bake for 12-15 minutes until springy to touch.
  5. Whip heavy cream until stiff peaks form; fold in mascarpone cheese and vanilla extract until smooth.
  6. Cool cake slightly, then flip onto a cocoa-dusted kitchen towel. Roll up tightly from one end, cooling completely in the towel.
  7. Unroll cooled cake, spread mascarpone filling evenly, roll back up (without towel), wrap in plastic wrap, and chill for at least an hour.
