- 1 red bell pepper, diced
- 1 small red onion, finely chopped

Instructions
- Shuck the corn and remove silk. Boil or grill until tender (about 5-7 minutes). Let cool.
- Finely chop the red bell pepper and red onion while the corn cools.
- In a large bowl, combine chopped vegetables and cilantro.
- Squeeze lime juice over the mixture and drizzle with olive oil. Add chili powder, salt, and pepper; stir to combine.
- Taste and adjust seasoning as desired.
