  • 1 large onion, diced
  • 3 medium carrots, chopped
  • 2 large potatoes, cubed
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 2 bay leaves

Instructions

  1. Cut the chuck roast into bite-sized pieces and season with salt and pepper. Dice the onion and chop the carrots and potatoes.
  2. Set your Instant Pot to 'Sauté' mode. Add oil and brown the meat in batches until golden. Remove from the pot.
  3. Add onions to the pot and sauté until translucent, then add garlic and stir for another minute.
  4. Return browned meat to the pot along with carrots, potatoes, thyme, bay leaves, and pour in beef broth. Stir to combine.
  5. Close the lid securely and set to 'Sealing.' Select 'Manual' at high pressure for 35 minutes.
  6. Allow for a natural pressure release for 10 minutes before switching to quick release. Remove bay leaves before serving.
