- 1 large onion, diced
- 3 medium carrots, chopped
- 2 large potatoes, cubed
- 4 cups low-sodium beef broth

- 2 bay leaves
Instructions
- Cut the chuck roast into bite-sized pieces and season with salt and pepper. Dice the onion and chop the carrots and potatoes.
- Set your Instant Pot to 'Sauté' mode. Add oil and brown the meat in batches until golden. Remove from the pot.
- Add onions to the pot and sauté until translucent, then add garlic and stir for another minute.
- Return browned meat to the pot along with carrots, potatoes, thyme, bay leaves, and pour in beef broth. Stir to combine.
- Close the lid securely and set to 'Sealing.' Select 'Manual' at high pressure for 35 minutes.
- Allow for a natural pressure release for 10 minutes before switching to quick release. Remove bay leaves before serving.
