- 3–4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 2 cloves fresh garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup chopped carrots and bell peppers (optional)
Instructions
- Trim excess fat from chicken breasts and pat dry.
- In a bowl, whisk together balsamic vinegar, honey, garlic, oregano, salt, and pepper.
- If using vegetables, place them at the bottom of the slow cooker. Layer the chicken on top and pour the sauce evenly over it.
- Cover the slow cooker and set to low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken inside the pot and mix well with the sauce before serving.
