- 3–4 boneless, skinless chicken breasts
- 1 packet Italian seasoning
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 8 oz pasta (penne or rotini)
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach or kale
- Garlic powder and onion powder to taste
- Salt and pepper to taste
Instructions
- Chop the chicken into bite-sized pieces for even cooking.
- In a slow cooker, combine chicken, cream cheese, chicken broth, garlic powder, onion powder, and Italian seasoning. Stir well.
- Set the slow cooker to low heat and cook for 6 hours until the chicken shreds easily with a fork.
- About 30 minutes before serving, stir in uncooked pasta. Cover and cook until al dente.
- In the last 10 minutes of cooking, add spinach or kale and sprinkle with Parmesan cheese.
- Serve hot, garnished with extra cheese if desired.
