Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 packet Italian seasoning
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 8 oz pasta (penne or rotini)
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach or kale
  • Garlic powder and onion powder to taste
  • Salt and pepper to taste

Instructions

  1. Chop the chicken into bite-sized pieces for even cooking.
  2. In a slow cooker, combine chicken, cream cheese, chicken broth, garlic powder, onion powder, and Italian seasoning. Stir well.
  3. Set the slow cooker to low heat and cook for 6 hours until the chicken shreds easily with a fork.
  4. About 30 minutes before serving, stir in uncooked pasta. Cover and cook until al dente.
  5. In the last 10 minutes of cooking, add spinach or kale and sprinkle with Parmesan cheese.
  6. Serve hot, garnished with extra cheese if desired.
