- 1 red bell pepper
- 1 green bell pepper
- 1 medium onion
- 1/4 cup fresh cilantro
- 2 tbsp taco seasoning
- 4 large whole wheat or corn tortillas
- 1 cup black beans (optional)
Instructions
- Crumble the tofu into a bowl. Heat olive oil in a skillet over medium heat and sauté chopped onions and bell peppers until soft.
- Add crumbled tofu and taco seasoning, cooking for about 5-7 minutes until heated through.
- Stir in chopped cilantro and black beans if desired.
- Warm tortillas in another skillet for about 30 seconds on each side.
