- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- For Tzatziki Sauce: 1/2 cup grated cucumber (excess water squeezed out)
- 1/4 cup Greek yogurt
- 1 tbsp dill or mint, chopped
- Salt and pepper to taste
Instructions
- In a bowl, mix Greek yogurt, minced garlic, lemon juice, oregano, paprika, olive oil, salt, and pepper. Marinate chicken in this mixture for at least 30 minutes.
- Preheat the grill or skillet over medium-high heat.
- Grill marinated chicken for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
- While the chicken cooks, prepare the tzatziki sauce by combining grated cucumber, Greek yogurt, dill or mint, salt, and pepper in a bowl.
- Fluff cooked rice or warm pita bread in bowls. Slice grilled chicken and place on top.
