  • 2 tbsp lemon juice
  • 1 cup cooked rice or 4 pita breads
  • 2 tbsp extra virgin olive oil
  • 1 cup diced cucumbers
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • For Tzatziki Sauce: 1/2 cup grated cucumber (excess water squeezed out)
  • 1/4 cup Greek yogurt
  • 1 tbsp dill or mint, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix Greek yogurt, minced garlic, lemon juice, oregano, paprika, olive oil, salt, and pepper. Marinate chicken in this mixture for at least 30 minutes.
  2. Preheat the grill or skillet over medium-high heat.
  3. Grill marinated chicken for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  4. While the chicken cooks, prepare the tzatziki sauce by combining grated cucumber, Greek yogurt, dill or mint, salt, and pepper in a bowl.
  5. Fluff cooked rice or warm pita bread in bowls. Slice grilled chicken and place on top.
  6. Add fresh veggies and drizzle with tzatziki sauce.
