  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Soak the dried navy beans overnight in cold water.
  2. Drain and rinse the beans, then place them in a large pot. Cover with fresh water by about two inches.
  3. Bring to a boil over medium-high heat, then reduce to low and simmer until tender, about 45 minutes.
  4. Sauté chopped onions in a skillet over medium heat until translucent, about 5 minutes.
  5. Add diced bacon or ham hock and cook until crispy.
  6. Combine cooked beans with sautéed onions and bacon in a large bowl. Mix in diced tomatoes, maple syrup, Dijon mustard, paprika, salt, and pepper.
