Instructions

  1. Gather and prep all ingredients: chop onions, mince garlic and ginger, and dice tomatoes.
  2. In a large pan, heat oil over medium heat. Sauté onions until golden brown.
  3. Add minced garlic and ginger; cook until fragrant (about 1 minute).
  4. Stir in diced tomatoes and salt; cook until tomatoes break down (about 5 minutes).
  5. Mix in curry powder and garam masala; stir for another minute.
  6. Add chicken thighs; coat them well in the sauce.
  7. Pour in coconut milk and simmer on low heat for 20-25 minutes until chicken is tender.
  8. Garnish with fresh cilantro and serve hot with rice or naan.
