- 1 lb boneless chicken thighs
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 ripe tomatoes, diced
- 1 cup coconut milk
- 2 tbsp curry powder
- 1 tsp garam masala
- Fresh cilantro for garnish
- Oil for sautéing
- Salt and pepper to taste
Instructions
- Gather and prep all ingredients: chop onions, mince garlic and ginger, and dice tomatoes.
- In a large pan, heat oil over medium heat. Sauté onions until golden brown.
- Add minced garlic and ginger; cook until fragrant (about 1 minute).
- Stir in diced tomatoes and salt; cook until tomatoes break down (about 5 minutes).
- Mix in curry powder and garam masala; stir for another minute.
- Add chicken thighs; coat them well in the sauce.
- Pour in coconut milk and simmer on low heat for 20-25 minutes until chicken is tender.
- Garnish with fresh cilantro and serve hot with rice or naan.
