Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter until combined. Press firmly into the bottom of a springform pan.
- Bake crust for 10 minutes until golden brown. Allow to cool.
- Beat softened cream cheese and sugar in a bowl until smooth. Add vanilla extract and mix well.
- In another bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
- Layer sliced bananas on the cooled crust, sprinkle crushed vanilla wafers over them, then spread half of the cheesecake filling on top.
- Cover and refrigerate for at least 4 hours or overnight to set.
