Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs
  • 1 tsp Italian seasoning
  • 8 oz fresh mozzarella (sliced)
  • 3 ripe tomatoes (sliced)
  • 1 cup fresh basil leaves
  • 4 tbsp extra virgin olive oil (divided)
  • 2 tbsp balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken cutlets by placing each breast between plastic wrap and gently pounding to about half an inch thick.
  2. Set up three shallow dishes: one for seasoned flour with salt and pepper, one for beaten eggs, and one with breadcrumbs mixed with Italian seasoning. Dredge each cutlet in flour, dip in egg, then coat with breadcrumbs.
  3. Heat enough olive oil in a large skillet over medium heat to cover the bottom. Fry each cutlet for 4-5 minutes per side until golden brown. Drain on paper towels.
  4. On a large platter, layer alternating slices of tomatoes and mozzarella cheese. Scatter chopped basil leaves throughout.
  5. Slice the fried chicken cutlets and arrange them on top of the tomato-mozzarella mix. Drizzle with remaining olive oil and balsamic glaze before serving.
