- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1/2 cup unsalted butter, softened
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- 1/4 cup panko breadcrumbs
- Salt and pepper to taste
- 1 tbsp lemon juice
Instructions
- Prepare the herbed butter filling by mixing softened butter with garlic, parsley, dill, lemon juice, salt, and pepper. Chill in the fridge.
- Pound each chicken breast between plastic wrap until about half an inch thick.
- Place herbed butter filling in the center of each chicken breast, fold sides in, and roll tightly.
- Set up a breading station: flour seasoned with salt and pepper in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
- Dredge each chicken roll in flour, dip into egg, then coat with panko breadcrumbs.
- Heat oil or butter in a skillet over medium heat and cook rolls seam-side down for about 6-7 minutes per side until golden brown.
