  • 1/2 cup unsalted butter, softened
  • 1/4 cup fresh parsley, chopped
  • 4 cloves fresh garlic, minced
  • 1 cup panko bread crumbs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp lemon juice
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup olive oil for frying

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lay chicken breasts flat and pound to about 1/2 inch thick for even cooking.
  3. In a bowl, mix softened butter, minced garlic, parsley, lemon juice, salt, and pepper until well combined.
  4. Place about 2 tablespoons of the herb butter mixture in the center of each chicken breast. Fold and roll tightly; secure with toothpicks if needed.
  5. Set up a dredging station with flour in one bowl, beaten eggs in another, and panko in a third. Coat each chicken roll first in flour, then dip in egg wash, and finally coat with panko crumbs.
  6. Heat olive oil in a skillet over medium heat. Fry chicken rolls for about 5-6 minutes on each side until golden brown and cooked through.
  7. Rest for a few minutes before slicing open to reveal the melted butter inside. Serve hot.
