  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, toss halved Brussels sprouts with olive oil and chili powder until well coated.
  3. Spread Brussels sprouts on a parchment-lined baking sheet and roast for 20-25 minutes, stirring halfway through.
  4. Add sweet corn to the baking sheet about 5 minutes before removing from the oven.
  5. In a small bowl, combine cotija cheese, lime juice, and cilantro.
  6. Once roasted, toss Brussels sprouts with the cheese mixture immediately.
  7. Serve warm, drizzled with extra lime juice.
