- 1 ½ cups (150g) graham cracker crumbs
- ½ cup (115g) unsalted butter, melted
Instructions
- Preheat your oven to 325°F (160°C). Prepare an 8×8 inch baking dish by lining it with parchment paper.
- In a bowl, mix graham cracker crumbs with melted butter until combined. Press the crumb mixture firmly into the bottom of the prepared dish.
- In a separate bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until fluffy. Incorporate eggs one at a time and blend in vanilla extract.
- Divide the cheesecake batter into multiple bowls and add different shades of gel food coloring. Gently swirl the colors together without overmixing.
- Pour half of the cheesecake batter over the crust, dollop spoonfuls of colored batter on top, then pour the remaining batter over it. Use a knife to create swirls.
- Bake for 45-50 minutes or until edges are set but center jiggles slightly. Allow cooling in the oven for an hour before transferring to chill in the refrigerator for about four hours.
- Slice into squares and serve.
