Ingredients

  • Lasagna noodles (no-boil preferred)
  • Ricotta cheese
  • Spinach (fresh or frozen)
  • Pesto sauce
  • Mozzarella cheese
  • Parmesan cheese
  • Eggs
  • Garlic powder

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. In a bowl, mix ricotta, eggs, garlic powder, salt, and pepper until smooth.
  3. Sauté fresh spinach until wilted or ensure frozen spinach is well-drained.
  4. Spread pesto sauce on the bottom of the dish; layer noodles, half the ricotta mixture, half the spinach, and sprinkle with mozzarella.
  5. Repeat layering with remaining ingredients and finish with noodles topped with pesto and mozzarella.
  6. Cover with foil and bake for 30 minutes; remove foil for the last 10 minutes until golden brown.
  7. Let cool slightly before slicing and serve warm.
