  • 1 cup red bell pepper sliced thinly

Dressing Ingredients
  • 3 tablespoons rice vinegar
  • 1 tablespoon soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar or honey
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • 1 pinch red pepper flakes optional

Method
 

Prepare the Vegetables
  1. In a mixing bowl, combine the sliced cucumbers, julienned carrots, and sliced red bell pepper.
Make the Dressing
  1. In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, grated ginger, and red pepper flakes until well combined.
Combine and Serve
  1. Pour the dressing over the vegetables and toss to coat evenly. Sprinkle with toasted sesame seeds before serving.
