Ingredients
  

Filling
  • 1 lb Ground Beef Choose high-quality ground beef for rich flavor.
  • 1 cup Onion Finely chopped.
  • 2-3 cloves Garlic Fresh minced.
  • 1 tsp Cumin Freshly ground for best flavor.
  • to taste Salt
  • to taste Pepper
Assembly
  • 8 Corn Tortillas Can substitute with flour tortillas.
  • 2 cups Shredded Cheese Blend of cheddar and Monterey Jack.
  • 2 cups Red Enchilada Sauce Homemade or store-bought.
Garnish (optional)
  • to taste Cilantro Use sparingly if you’re not a fan.

Method
 

Prepare the Beef Filling
  1. Brown one pound of ground beef in a large skillet over medium heat for 5 to 7 minutes, seasoning with salt, pepper, and cumin.
Sauté the Vegetables
  1. Add diced onions and minced garlic to the cooked beef and sauté for another 3 to 4 minutes until onions are translucent.
Assemble the Enchiladas
  1. Warm corn tortillas briefly, spoon beef mixture onto each tortilla, roll them up tightly, and place seam-side down in a greased baking dish.
Create the Red Sauce
  1. Combine canned tomato sauce, chili powder, and a pinch of cinnamon in a saucepan over medium heat, simmering for about 5 minutes.
Bake Your Enchiladas
  1. Pour the red sauce over the assembled enchiladas and bake until heated through.
