Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tbsp baking powder
  • 1 tsp salt
Wet Ingredients
  • 1 cup milk can substitute with almond milk
  • 1 large egg
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  2. In another bowl, combine the wet ingredients: milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Cook the Pancakes
  1. Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  2. Pour 1/4 cup of batter onto the griddle for each pancake.
  3. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  4. Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
  5. Repeat with the remaining batter, greasing the griddle as needed.
Serve
  1. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
