Rice
  • 1 cup white rice or brown rice
  • 2 cups water for cooking rice
Black Beans
  • 1 can black beans drained and rinsed
  • 1 cup vegetable broth or water
Seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Toppings
  • 1 cup chopped cilantro for garnish
  • 1 medium lime cut into wedges
  • 1 avocado sliced optional

Method
 

Cooking Rice
  1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
Preparing Black Beans
  1. In a large pot, heat olive oil over medium heat. Add the black beans, vegetable broth, cumin, paprika, garlic powder, salt, and pepper. Stir to combine and simmer for 10-15 minutes, allowing the flavors to meld.
Combining and Serving
  1. Once the rice is cooked, fluff it with a fork and serve it topped with the black bean mixture. Garnish with chopped cilantro, lime wedges, and sliced avocado if desired.
