Ingredients
  

Chicken and Marinade
  • 1 lb boneless chicken breast cut into bite-sized pieces
  • 3 tbsp soy sauce for marinade
  • 1 tbsp sesame oil for marinade
  • 1 tbsp ginger grated
  • 1 clove garlic minced
Vegetables
  • 1 cup zucchini sliced
  • 1 cup bell pepper sliced
  • 1 cup mushrooms sliced
  • 1 cup onion sliced
Fried Rice
  • 3 cups cooked rice preferably day-old
  • 2 tbsp soy sauce for rice
  • 2 eggs large beaten
  • 1 tbsp green onions chopped
  • 1 tbsp vegetable oil for cooking

Method
 

Marinate Chicken
  1. In a mixing bowl, combine soy sauce, sesame oil, ginger, and garlic. Add chicken pieces and marinate for at least 15 minutes.
Cook Chicken and Vegetables
  1. Preheat the Blackstone griddle over medium-high heat. Add a little oil and cook the marinated chicken until browned and cooked through, about 5-7 minutes.
  2. Add the sliced vegetables to the griddle and stir-fry until tender, about 5 minutes.
Prepare Fried Rice
  1. Push the chicken and vegetables to one side of the griddle. Add vegetable oil to the other side and scramble the beaten eggs until fully cooked.
  2. Add the cooked rice and soy sauce to the griddle, mixing everything together. Stir-fry for another 3-5 minutes until heated through.
  3. Garnish with chopped green onions before serving.
