Marinate Chicken
- In a mixing bowl, combine soy sauce, sesame oil, ginger, and garlic. Add chicken pieces and marinate for at least 15 minutes.
Cook Chicken and Vegetables
- Preheat the Blackstone griddle over medium-high heat. Add a little oil and cook the marinated chicken until browned and cooked through, about 5-7 minutes.
- Add the sliced vegetables to the griddle and stir-fry until tender, about 5 minutes.
Prepare Fried Rice
- Push the chicken and vegetables to one side of the griddle. Add vegetable oil to the other side and scramble the beaten eggs until fully cooked.
- Add the cooked rice and soy sauce to the griddle, mixing everything together. Stir-fry for another 3-5 minutes until heated through.
- Garnish with chopped green onions before serving.
