  • 3-4 pieces Boneless, Skinless Chicken Breasts
  • 1 cup Buffalo Sauce Choose your favorite brand or make your own.
  • 8 ounces Pasta Use rotini or penne.
  • 1 cup Ranch Dressing Homemade or store-bought.
  • 2 stalks Celery Stalks Select firm stalks for best texture.
  • 1 medium Red Onion Thinly sliced; soak in water for milder taste.
  • 1 cup Cheddar Cheese Shredded sharp cheddar.
  • 2 pieces Green Onions Chopped, use both white and green parts.
  • 1 tablespoon Fresh Parsley Chopped for garnish.
  • to taste Salt and Pepper Adjust according to preference.

Method
 

Prep the Pasta
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
Prepare the Chicken
  1. Shred leftover chicken or use a rotisserie chicken, ensuring it's juicy enough to complement the salad.
Mix the Dressing
  1. In a medium bowl, whisk together mayonnaise, Greek yogurt, buffalo sauce, garlic powder, onion powder, and a pinch of salt. Adjust spice level as desired.
