Ingredients

Pasta
  • 12 ounces spaghetti or any pasta of your choice
Sauce
  • 2 tablespoons olive oil extra virgin
  • 3 cloves garlic minced
  • 1 pint cherry tomatoes halved
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 1 bunch fresh basil torn
Topping
  • 8 ounces burrata cheese at room temperature
  • 1 tablespoon balsamic glaze for drizzling

Method

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Sauce
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the halved cherry tomatoes, salt, and pepper. Cook for about 5-7 minutes until the tomatoes are soft and start to burst.
  3. Stir in the torn basil and mix well.
Combine and Serve
  1. Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
  2. Plate the pasta and top each serving with a generous piece of burrata cheese. Drizzle with balsamic glaze and serve immediately.
