Ingredients
  

Pasta
  • 12 oz penne pasta or any pasta of your choice
Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
Sauce
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 cup spinach fresh, optional

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Cook Chicken
  1. In a skillet, heat olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
Make Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the parmesan cheese until melted and smooth.
Combine
  1. Add the cooked chicken and pasta to the skillet. Toss to combine, adding spinach if using. Season with salt and pepper to taste.
Serve
  1. Serve hot, garnished with additional parmesan cheese if desired.
