Method
Cook Pasta
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Cook Chicken
- In a skillet, heat olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
Make Sauce
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the parmesan cheese until melted and smooth.
Combine
- Add the cooked chicken and pasta to the skillet. Toss to combine, adding spinach if using. Season with salt and pepper to taste.
Serve
- Serve hot, garnished with additional parmesan cheese if desired.
