Prepare the Chicken Salad
- In a mixing bowl, combine the shredded chicken, mayonnaise, diced celery, halved grapes, Dijon mustard, lemon juice, salt, and black pepper.
- Mix well until all ingredients are evenly coated with the mayonnaise.
Assemble the Sandwiches
- Lay out the slices of bread on a clean surface.
- Spread a generous amount of the chicken salad mixture onto half of the bread slices.
- Top with lettuce leaves and tomato slices if using, then place the remaining bread slices on top to form sandwiches.
- Cut the sandwiches in half and serve immediately.
