Ingredients
  

Chicken Salad
  • 2 cups cooked chicken, shredded can use rotisserie chicken
  • 1 cup mayonnaise adjust to taste
  • 1 cup celery, diced for crunch
  • 1 cup grapes, halved optional for sweetness
  • 1 teaspoon Dijon mustard for flavor
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Sandwich Assembly
  • 8 slices bread your choice, such as whole grain or white
  • 4 leaves lettuce for garnish
  • 1 medium tomato, sliced optional

Method
 

Prepare the Chicken Salad
  1. In a mixing bowl, combine the shredded chicken, mayonnaise, diced celery, halved grapes, Dijon mustard, lemon juice, salt, and black pepper.
  2. Mix well until all ingredients are evenly coated with the mayonnaise.
Assemble the Sandwiches
  1. Lay out the slices of bread on a clean surface.
  2. Spread a generous amount of the chicken salad mixture onto half of the bread slices.
  3. Top with lettuce leaves and tomato slices if using, then place the remaining bread slices on top to form sandwiches.
  4. Cut the sandwiches in half and serve immediately.
