Ingredients
  

Pancake Batter
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1 cup milk
  • 1 large egg
  • 2 tbsp butter melted
  • 1 tsp vanilla extract
Cinnamon Filling
  • 1 tbsp cinnamon
  • 1 tbsp brown sugar
  • 1 tbsp butter softened
Cream Cheese Icing
  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Method
 

Make the Pancake Batter
  1. In a mixing bowl, whisk together flour, sugar, and baking powder.
  2. In another bowl, mix milk, egg, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients until just mixed; do not overmix.
Prepare the Cinnamon Filling
  1. In a small bowl, mix together cinnamon, brown sugar, and softened butter until well combined.
Cook the Pancakes
  1. Preheat a griddle or frying pan over medium heat and lightly grease it.
  2. Pour 1/4 cup of pancake batter onto the griddle.
  3. Using a spoon, swirl a small amount of the cinnamon filling on top of the batter.
  4. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Repeat with remaining batter and filling.
Make the Cream Cheese Icing
  1. In a mixing bowl, beat together softened cream cheese, powdered sugar, milk, and vanilla until smooth.
Serve
  1. Stack pancakes on a plate and drizzle with cream cheese icing.
  2. Enjoy your cinnamon roll pancakes warm!
