Ingredients
  

Vegetables
  • 2 medium courgettes sliced lengthwise into thin strips
Filling
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Sauce
  • 1 cup tomato sauce for serving

Method
 

Prepare the Courgettes
  1. Preheat the griddle pan over medium heat. Slice the courgettes lengthwise into thin strips using a knife or a vegetable peeler.
  2. Grill the courgette strips for about 2-3 minutes on each side until they are tender and have grill marks. Remove from heat and set aside.
Make the Filling
  1. In a mixing bowl, combine the ricotta cheese, grated Parmesan, chopped basil, chopped parsley, minced garlic, salt, and black pepper. Mix well until smooth.
Assemble the Rolls
  1. Take one grilled courgette strip and place a spoonful of the ricotta filling at one end. Roll it up tightly and place it seam-side down in a baking dish. Repeat with the remaining strips and filling.
Bake and Serve
  1. Preheat the oven to 375°F (190°C). Pour the tomato sauce over the assembled courgette rolls. Bake for 10-15 minutes until heated through. Serve warm.

Notes

These courgette rolls can be made ahead of time and baked just before serving. You can also add other herbs or spices to the filling according to your taste.
