  • 2 large ripe bananas mashed
  • 8 oz cream cheese softened
  • 1 cup sugar granulated
  • 1 large egg beaten
  • 1 tsp vanilla extract
Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp cinnamon optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a mixing bowl, beat the softened cream cheese and sugar together until smooth.
  3. Add the mashed bananas, beaten egg, and vanilla extract to the cream cheese mixture and mix until well combined.
Combine Ingredients
  1. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  2. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Bake
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
