Ingredients
  

Vegetables
  • 2 cups cucumbers diced
  • 2 cups tomatoes diced
  • 1 cup red onion finely chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon dried oregano

Method
 

Prepare the Vegetables
  1. Dice the cucumbers and tomatoes, and finely chop the red onion. Place them in a mixing bowl.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, salt, black pepper, and dried oregano.
Combine and Serve
  1. Pour the dressing over the diced vegetables and toss gently to combine. Serve immediately.
