Ingredients
  

Salad Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup corn canned or frozen
  • 1 cup black beans rinsed and drained
  • 1 cup cheddar cheese shredded
  • 2 cups Doritos crushed
Taco Meat
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup water
Dressing
  • 1 cup sour cream
  • 1 cup ranch dressing
  • 1 tablespoon lime juice

Method
 

Prepare Taco Meat
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and water to the skillet. Stir and simmer for 5 minutes until thickened.
Assemble Salad
  1. In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, corn, black beans, and cheddar cheese.
  2. Add the cooked taco meat to the salad mixture and toss to combine.
  3. In a separate bowl, mix together the sour cream, ranch dressing, and lime juice to create the dressing.
  4. Pour the dressing over the salad and toss until everything is well coated.
  5. Top with crushed Doritos just before serving for extra crunch.
