Ingredients
  

Fried Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour for coating
  • 1 tablespoon paprika for seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups vegetable oil for frying
Mashed Potatoes
  • 2 pounds russet potatoes peeled and cubed
  • 1/2 cup milk warm
  • 1/4 cup butter unsalted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Coleslaw
  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
  2. In another bowl, place the flour and season with additional salt and pepper. Dredge the marinated chicken in flour, shaking off excess.
Fry the Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
  2. Carefully add the chicken to the hot oil, cooking in batches if necessary. Fry for about 10-12 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  3. Remove chicken from the skillet and drain on paper towels.
Make Mashed Potatoes
  1. Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
  2. Add warm milk, butter, salt, and pepper. Mash until smooth and creamy.
Prepare Coleslaw
  1. In a large bowl, combine shredded cabbage and carrots.
  2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour over the cabbage mixture and toss to combine.
Serve
  1. Plate the fried chicken alongside a generous serving of mashed potatoes and coleslaw. Enjoy your meal!
