Ingredients
  

Salad Base
  • 1 can sweet corn drained
  • 1 cup cherry tomatoes halved
  • 1 cup green bell pepper diced
  • 1 cup red onion finely chopped
  • 2 cups Fritos crushed slightly
Dressing
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the drained sweet corn, halved cherry tomatoes, diced green bell pepper, and chopped red onion.
  2. In a separate bowl, mix together the sour cream, mayonnaise, lime juice, chili powder, salt, and black pepper until smooth.
  3. Pour the dressing over the salad mixture and stir until everything is well coated.
  4. Gently fold in the crushed Fritos just before serving to maintain their crunch.

Notes

This salad is best served chilled and can be made a few hours in advance. Just add the Fritos right before serving to keep them crispy.
