Prepare the Salad
- In a large mixing bowl, combine the drained sweet corn, halved cherry tomatoes, diced green bell pepper, and chopped red onion.
- In a separate bowl, mix together the sour cream, mayonnaise, lime juice, chili powder, salt, and black pepper until smooth.
- Pour the dressing over the salad mixture and stir until everything is well coated.
- Gently fold in the crushed Fritos just before serving to maintain their crunch.
