  • ½ cup extra virgin olive oil high-quality
  • 2 cloves fresh garlic minced
  • 1 large egg yolk pasteurized
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce original
  • 2 tablespoons fresh lemon juice squeezed
  • ¼ cup Parmesan cheese grated
  • to taste salt freshly cracked
  • to taste pepper freshly cracked

Method
 

Make the Dressing
  1. Gather all ingredients for your Caesar salad dressing.
  2. In a medium mixing bowl, combine egg yolk and Dijon mustard. Whisk until smooth and creamy.
  3. Finely mince garlic and add to the bowl along with anchovy paste and lemon juice. Stir well.
  4. Gradually drizzle in olive oil while continuously whisking until the dressing is creamy but pourable.
  5. Grate Parmesan cheese into the mixture, stir well, and adjust seasoning with salt and pepper.
  6. Serve over crisp romaine lettuce or store in an airtight container in the fridge for up to one week.
