Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
Ice Cream
  • 2 cups vanilla ice cream softened
Toppings
  • 1 cup sprinkles optional
  • 1 cup chocolate syrup optional

Method
 

Make the Cookies
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour and baking soda. Gradually add to the creamed mixture.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until golden brown. Let cool completely.
Assemble the Sandwiches
  1. Take one cookie and scoop a generous amount of softened vanilla ice cream onto the center.
  2. Top with another cookie to create a sandwich. Press gently to spread the ice cream to the edges.
  3. Roll the edges in sprinkles if desired.
  4. Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
