Method
Make the Cookies
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, combine the flour and baking soda. Gradually add to the creamed mixture.
- Fold in the chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.

Assemble the Sandwiches
- Take one cookie and scoop a generous amount of softened vanilla ice cream onto the center.
- Top with another cookie to create a sandwich. Press gently to spread the ice cream to the edges.
- Roll the edges in sprinkles if desired.
- Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
