Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup milk room temperature
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1/4 cup milk adjust for consistency
  • 1 tsp vanilla extract
Fruit Filling
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup whipped cream

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and line the cake pans with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add softened butter, milk, eggs, and vanilla extract. Mix on medium speed until smooth.
  4. Divide the batter evenly between the prepared pans.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Let cool.
Prepare the Frosting
  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add powdered sugar, mixing until well combined.
  3. Add milk and vanilla extract, mixing until fluffy and smooth.
Assemble the Cake
  1. Once the cakes are completely cooled, place one layer on a serving plate.
  2. Spread a layer of whipped cream and top with sliced strawberries and blueberries.
  3. Place the second cake layer on top and frost the entire cake with the prepared frosting.
  4. Decorate with remaining fruit on top for a pretty finish.
