Ingredients
  

Seafood and Vegetables
  • 1 lb large shrimp peeled and deveined
  • 1 lb baby potatoes halved
  • 2 ears corn cut into thirds
  • 1 lb smoked sausage sliced
Seasoning
  • 2 tbsp olive oil
  • 2 tbsp Old Bay seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
Garnish
  • 2 tbsp fresh parsley chopped
  • 1 lemon for serving cut into wedges

Method
 

Prepare the Ingredients
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the shrimp, potatoes, corn, and sausage.
Season and Roast
  1. Drizzle the olive oil over the mixture and sprinkle with Old Bay seasoning, garlic powder, paprika, black pepper, and salt. Toss to coat evenly.
  2. Spread the mixture evenly on a large baking sheet.
  3. Roast in the preheated oven for 20-25 minutes, or until the shrimp are pink and cooked through, and the potatoes are tender.
Serve
  1. Remove from the oven and garnish with fresh parsley. Serve with lemon wedges.

Notes

For a spicier kick, add red pepper flakes to the seasoning mix.
