Ingredients
  

Pasta
  • 12 pieces jumbo pasta shells cooked according to package instructions
Filling
  • 1 lb ground beef or ground turkey
  • 1 cup onion diced
  • 1 packet taco seasoning
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa
  • 1 cup cheddar cheese shredded
Topping
  • 1 cup cheddar cheese shredded for topping
  • 1 cup sour cream for serving
  • 0.5 cup green onions sliced for garnish

Method
 

Prepare the Pasta
  1. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
Make the Filling
  1. In a skillet over medium heat, cook the ground beef and onion until the meat is browned. Drain excess fat.
  2. Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 5 minutes until heated through.
Stuff the Shells
  1. Preheat the oven to 350°F (175°C).
  2. Fill each cooked pasta shell with the taco filling mixture and place them in a baking dish.
  3. Sprinkle the top with shredded cheddar cheese.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serve
  1. Serve hot, topped with sour cream and garnished with sliced green onions.
